Summary

Starting in October 2022, we have been operating "Kudan Shokudo KUDAN-SHOKUDO for the Public Good" at MONOSUS Shokuken.

Located just a one-minute walk from Kudanshita Station in Tokyo, the former Kudan Kaikan building has long been loved as a theater and banquet hall, and an office building called "Kudan Kaikan Terrace" has been added to it. In one corner of the building, a public restaurant has opened for business, serving organic, locally-sourced ingredients from small farms all over Japan.

This restaurant is open to anyone, including residents of Kudan Kaikan Terrace.

Issue

This project began with a request from Business Director Arai to open a store as a tenant. Rather than simply opening a store, we proposed the idea of a "company cafeteria that could be shared by the entire building." Recognizing that 77.3% of Japanese companies currently do not have a company cafeteria, we thought we could increase the value of the entire building while also supporting the healthy eating habits of office workers. A company cafeteria with a stable number of daily customers makes it easier to predict the number of meals served, which also has the benefit of contributing to the food supply chain by allowing for a stable supply of ingredients from small producers. This proposal matched Tokyu Land Corporation's concept of an "office building that contributes to the promotion of health management," and the project officially began as an essential element in achieving this goal.

After the project began, we were involved from the concept development stage. We placed great importance on the idea of " triple win ."

We aimed to become a familiar presence in the local community, respecting the historical and cultural background of the Kudan area in which it is located. In addition, to embody the building's concept of "healthy management," we designed menus that incorporate the global trend of promoting vegetable consumption and plant-based thinking.

The unique menu concept and the birth of Kudan Shokudo Based on the idea that "eating a balanced diet of various foods leads to good health," we based our restaurant on a set meal style. However, taking into consideration the fact that there are many noodle restaurants in the area, which are difficult to maintain a balanced nutritional profile, we made the choice not to offer noodles. This is how Kudan Shokudo, based on a unique concept, was born.

Result

This unique concept design has expanded beyond our initial expectations. While the prices are not cheap, Kudan Shokudo has attracted companies with employee cafeterias in other buildings, as well as users of the ward office cafeteria. Just two and a half years after opening, the number of people eating at the restaurant per day has increased by approximately 2.5 times, from 180 to 460. Initially, there were concerns that the high-priced set meals would be difficult to attract, but the pleasing result was that over 60% of orders were for set meals. Furthermore, approximately 40% of the customers are members of the general public, making the restaurant a beloved spot, especially among local residents. Rather than simply providing a cafeteria for building tenants, we created new value by being open to the community. Kudan Shokudo continues to grow as a place that connects people and the city, going beyond the scope of an "employee cafeteria."
