Part 2: Seasonal loaf, snack bread

"Kamapan" is made by the Food Hub Project (Kamiyama-cho, Tokushima Prefecture). This delicious bread made with local ingredients is very popular at the Yoyogi office. In response to requests, every Thursday, "Monosasu Bread Day" is held, and people line up inside the office to get bread delivered from Kamiyama.

The bread produced by Food Hub, which has the motto "Farm Local, Eat Local," is not a special bread to eat on special occasions, but an everyday bread that is rooted in daily life. It is as delicious as rice, so you won't get tired of eating it every day.

This corner introduces the deliciousness of Kamapan. Following on from the first installment's "Sliced Bread" and "Super Soft Bread" , in the second installment we will be looking at "Seasonal Loaf" and "Snack Bread". Of the many types of snack bread available, we would like to introduce three: "Banana Muffin", "Bean Jam Bread" and "Cinnamon Roll".

"Seasonal Loaf" - Enjoy the flavors of Kamiyama

Let's start with the "Seasonal Loaf."
Mugwort, carrots, sweet potatoes...the most delicious seasonal ingredients of the season are kneaded into the bun dough and then baked in a loaf shape (rectangular).

What's interesting is that the texture changes depending on the ingredients kneaded into the bread. The chewy texture of mugwort, the refreshing taste of carrots, and the fluffy texture of sweet potato. They're all delicious, but no matter how much you like them, they stop being produced once the season is over. You'll have to say goodbye until the next season. (By the way, the current season is "sweet potato loaf.")

Experience the seasonal flavors of Kamiyama through bread. The "Seasonal Loaf" is flavorful because it can't be eaten any time of the year, so we asked him about its appeal.

First of all, I just love the idea of bread being delivered to the office.
The conversations of "The bread has arrived" and the sight of everyone lining up for the bread are funny and happy.

Of the several types of bread that arrive every week, I often buy the "seasonal loaf."
I like sweet potatoes the best and wish they were available all year round. I also like how the color of the loaf changes from red to purple depending on the type of sweet potato. I like the chewy texture, so I eat it as is without baking.

Sweet potato is currently number one, so it's sad to say goodbye to it so soon, but I'm looking forward to seeing what kind of loaf I get next.

Everyone's favorite, snack bread The classic items for Monosasu Bread Day are the "Sliced Bread" and "Super Soft" that we introduced last time, and the "Seasonal Loaf" mentioned earlier.

All that's left is the "snack bread" that the members are looking forward to!

What kind of snack bread will arrive is a surprise until the day. Bean-sweetened bean buns, melon buns, cinnamon rolls, banana muffins... The Kamapan will arrive just in time for snacks. It's the perfect "snack" for hungry members.

When new bread arrives, it is so popular that sometimes there is a scramble to get it. This time, we will introduce three types.

In my home where I live with my Pakistani husband and son, we have a South Asian staple of sweet chai and paratha. Paratha is a type of bread made by making dough from whole wheat flour called atta, water and salt, rolling it out into a circular shape and baking it.

However, preparing this every day can be quite a hassle on busy mornings.

At times like that, Kamaya's bread is a great help. In fact, I want to eat Kamaya's bread every morning! I especially love their moist "banana muffins" with walnuts. Just one of these is enough to fill me up.

My husband likes to eat something sweet in the morning, so I warm up a banana muffin in the microwave for a little while, and my 3-year-old son cuts it into small pieces and dunks it in chai.

That's how we enjoy a sweet breakfast together as a family!

I love bean-jam bread, but I was having trouble finding delicious bean-jam bread easily in my neighborhood. Just when I was at a loss, Kamapan began to be sold within the company, and bean-jam bread was included in the product lineup!

"This is it," I thought, and when I tried it, I was surprised at how good it was.
Since then, Kamapan's anpan has become an essential snack to satisfy my hunger.

Kamapan's bean paste buns are delicious as they are, but we recommend spreading them with butter and lightly baking them in the oven, as the sesame aroma and crispy texture will bring out the subtle, refined sweetness of the bean paste and the chewy texture of the dough.

Cinnamon roll 180 yen (excluding tax)

I think we've all experienced the feeling of being hungry after 3pm, and when I'm at Monosus at such a gushing hour, I end up buying too much bread, which arrives from Kamiyama.

I am especially addicted to the sweet, unique aroma and tingling sensation of cinnamon rolls.
The powdered sugar on top is just sweet, like powdered snow, and the moment you wash it down with hot coffee, it feels like all your distracting thoughts disappear. A state of nothingness.

On days when my tasks seem to be blowing up like a balloon and I feel like I'm not making any progress, eating a cinnamon roll makes me feel like a balloon with a hole in it.

The ideal way to eat it is to place it on a round plate as shown in the picture, and eat it elegantly with a knife and fork. I can't show you the real thing (munching on a cinnamon roll while munching on a PC) (laughs).

We asked Yama-chan, a baker of kama bread.

Finally, we asked Yama-chan, the baker, about his recommended bread.

My name is Yamada, and I am a baker and veggie bread manager at Kamapan & Store.
My recommendation is definitely the "seasonal crumble cake"! (Though it's not a bread...)


Sweet potato crumble cake 200 yen (excluding tax)

The crumble cake series uses an abundance of ingredients that can only be enjoyed at that time of year, starting with late-summer blueberries, followed by pumpkin, chestnuts, yuzu, ginger, and sweet potatoes, all harvested in Kamiyama. The key is to cut the ingredients into large chunks and place them dynamically on top to make the most of the ingredients' texture.


Chestnuts, yuzu, ginger, sweet potatoes... we use seasonal ingredients.

Enjoy the seasonal flavors of this crumble cake with some refreshing strained yogurt and vanilla ice cream, and have a relaxing cafe time with coffee.

Also available for the New Year was the "Ginger Scallop Cake".
"Hota" refers to a steamed brown sugar bread-like snack that has been popular in Kamiyama for a long time. After more than 10 trial runs in pursuit of the right taste and texture, we have completed the "Kamapan version of Hota," which combines a nostalgic taste with the flavor of spices. It has been well received by locals and those who have returned home, and some customers have even bought it whole. Unfortunately, the ginger season has ended, so we will have to wait until next year to make this...

I am currently working on a carrot cake based on the recipe for the scallop cake, using carrots from Tsunagu Farm. I will continue to work hard on recipe development so that everyone can enjoy seasonal ingredients!

How to create good blood circulation with members and other people involved? How can we deepen our relationships to do better work? While thinking about this, we introduce the people and work of Monosus. The secretariat has approximately five members. I love eating a lot.
