~Yoyogi Bistria~

"Since you have experience in the food and beverage industry, why don't you try making a walking map of Yoyogi?"
I heard about this in early October.

Without any hesitation, I immediately said, "I'd love to write it!"
One store already came to mind.

It's my favorite restaurant, Bistria.

Bistria is a combination of the words "Bistro" and "Trattoria."
The owner, Mr. Inayoshi, likes both French and Italian cuisine,
The name was chosen with the hope that there would be a Western restaurant that serves dishes that go well with wine, where both can be enjoyed casually without any formality.

Now, here's why I love this store so much...

It's so comfortable that you'll want to pass through,
This is because we have friendly staff who are like family.

The first time I visited the store was at the end of July, when the rainy season was just coming to an end and the weather was just starting to get hot.
It all started when I was invited to lunch by a female colleague from work who I often go to.

I followed him excitedly, and the first thing that caught my eye was the brick exterior and handwritten menu sign.


They all look delicious! I always find myself stopping here and wondering which one to choose.

The interior of the restaurant is dimly lit and the walls are lined with handwritten menus.


I'm still waiting for the food to be ready.

For lunch, you can choose from three types of pasta every day.
A set of salad, focaccia and drink costs 1,000 yen.
There is also a luxurious pasta set available for an additional 300 yen for just one type.

The first thing that comes when you order is
Salad made with organic vegetables delivered directly from the source.


On this day, we had pumpkin potato salad! It went perfectly with the crispy bacon.

According to the chef, the baby leaves and other leafy vegetables used in salads are
They choose dishes with strong flavors, and even make their own dressings.

It would be a shame to eat all the seasonal side dishes.

And this fluffy focaccia!
It's slightly soaked in olive oil, so it's very chewy.


If I use it as a pillow, I'll fall asleep right away.

Masumi-san brings us piping hot pasta. Her smile always makes us feel happy!

Here it comes! Pasta!
On this day, I chose shrimp, broccoli and anchovy cream pasta.
The shrimp are very plump!

When I spoke to the chef,
The noodles are from Liguria, Campania, Italy (the area below the shin if Italy is represented as a boot).
They say they use products made from

These noodles are dried for a long period of time, which allows them to stay al dente for a long time.

Even though the noodles cooled down while I was eating, they still had a firm texture.
This is because it had been al dente for a long time!

Other ingredients include olive oil, salt, and cheese.
Apparently they use everything from Italy.


The kitchen where lunch is prepared. It was impressive to see how skillfully the chef and staff prepared the food.

By paying close attention to each and every ingredient, they are able to create delicious food.
I finally understand why it's so delicious.

I love the pasta at Bistria.


This is just a small part. There is more.

This shop is about a 1-minute walk from Minami-Shinjuku Station and a 5-minute walk from Yoyogi Station.
The owner, Mr. Inayoshi, originally lived in Yoyogi.
He was attracted by the town's friendly atmosphere and warm people and decided to open a shop.

There must be some secret that only an owner like that has to create a comfortable store.
When I asked him about it, he answered me like this:

"I love eating and drinking,
More than anything, I love making people happy, so I went into the food and beverage industry.
Not only customers and friends who come to the store,
People who live or work in Yoyogi can easily get there,
I wanted to create a place where people could have a wonderful time.
From now on, the whole town of Yoyogi will become more lively,
I would be happy if as many people as possible could enjoy it!

It's so cozy that you'll want to come back again and again.
Perhaps it was born from the owner's thinking.

But there are other things that make Bistria so cozy.

The reason is that all of our staff graduated from the same culinary school.

We didn't decide to open a store together from the beginning.
It seems like they just came together naturally.

I actually graduated from culinary school,
I thought it was quite unusual that we both worked in the same store after graduating.

I feel that the comfortable atmosphere and family-like warmth of Bistria surely comes from these connections, and after hearing his story it all made sense to me.
