My name is Manabe, and I am the head of the Production Department and manager of the Food Hub Project.
It's been a while since our last article on the Monosasu website in October of last year , but the Food Hub Project has been bustling with activity this year.

Activities have begun in earnest, including the "Tsunagu Farm" initiative run by the Food Hub, developing menus for the cafeteria and prototyping processed foods, selecting items to sell in the store, planning and producing original goods, food education activities in the community, and test openings of the cafeteria and store within the town.

Two stores, "Kama-ya" (restaurant) and "Kamapan & Store" (bread and food), which had a pre-opening only in Kamiyama Town, held their grand opening on March 3rd. Thanks to your support, they have been bustling with many customers every day. And finally, the Food Hub Project website has been launched, and we are finally able to tell everyone about our daily activities.
So today, I would like to briefly introduce the Food Hub Project website and our restaurant.

Cherish the usual "Itadakimasu"

First, let me introduce you to the Food Hub Project website, which has just been launched.
On this site we would like to share the various activities of the Food Hub Project, which is centered around "Farm Local, Eat Local."

"Locally produced food"
The nature and agriculture of the land, agriculture and local people, local people and the food we eat every day,
It is a food culture that circulates throughout the seasons and is passed down to the next generation.

Our activities are centered in Kamiyama, but we believe that the idea of "locally produced, locally sourced food" can be applied anywhere. We hope that the website will be an opportunity for everyone to experience their own "locally produced, locally sourced food," including not only people from the town, but also those visiting Kamiyama from nearby areas, and those who sympathize with our activities and ideas from afar.

The title of the website is "Everyday Eats."
Let's cherish the everyday "Itadakimasu" rather than the special "Itadakimasu."
That is the feeling I have in mind.

Specifically, we will communicate Food Hub's philosophy and initiatives from four perspectives: "growing," "making," "eating," and "connecting," and we will also update content that shows the daily activities.

  • Today's menu...Kamaya restaurant lunch menu
  • Activity diary...From small news items to interviews and other reading material
  • Events: Information on events such as cooking classes, crafts, and agricultural experiences.

We will also be publishing information about the produce-to-eat ratio (the percentage of food grown locally that is eaten locally) of the menu items served at the Kamaya restaurant, as well as the status of the Stone-Covered House, an agricultural demonstration project that makes use of Kamiyama's terrain.

We wanted to share this and that, so we got a bit too greedy (lol), and the site ended up being packed with a lot of information, but rather than a one-way send/receive, we want to share a mutual understanding with readers, where we can agree that something is right...we want to cherish the fun of a class newspaper, and honestly share what's going on with us now.

The grand opening reception was held the other day, and instead of a ribbon cutting, they cut the rope. Many guests from inside and outside the town attended, and the unveiling went off without a hitch.

Next, I would like to introduce the two stores that serve as the base of our activities.
After a test opening limited to Kamiyama town at the beginning of the year, we successfully held our grand opening on March 3rd (this year was both short and long, and a lot happened...).

The shop is located in an area called Jinryou in Kamiyama.
The location is just off National Route 438, near Yorii, known locally as the Ginza of Kamiyama. On the same premises, there is Kamaya (a restaurant) and Kamapan & Store (bread & food), with a grassy plaza in the middle.

The name "Kamaya" comes from "kamaya," which has long been used in Kamiyama.

In the old days, people used to have a firewood stove in the dirt floor of their homes, and this dirt floor was called "Kamaya," where people in the neighborhood would casually drop in to chat over tea. "Kamaya" and "Kamapan & Store" were born with the aim of becoming a place like a local kitchen.

At the center of the dining room, which is filled with the scent of wood, are three large hearths.
The rice cooked in this stove was grown on the Food Hub's farm last year. It's so delicious you'll never get tired of eating it every day. It's served with side dishes made with plenty of local ingredients.

The wooden trays and disposable chopsticks used in the cafeteria are originals made from Kamiyama cedar. The disposable chopsticks are not thrown away, but are reused as firewood for the stove.
We aim to be a restaurant where you can come every day and enjoy your meal, with breakfast, lunch and dinner options of your own choosing.

  • Lunch: Obanzai-style one-plate lunch using seasonal ingredients grown in Kamiyama
  • Dinner: Obanzai-style izakaya and set meal style restaurant

"Kamapan & Store" (bread and food)

Adjacent to the cafeteria is Kamapan & Store, a shop that sells bread and other groceries.
Kamapan sells bread, sandwiches, baked goods, and more, all made with home-cultured yeast. Freshly baked bread is delivered every morning.
The "Store" sells locally grown organic and specially cultivated vegetables, as well as miso, soy sauce, and seasonings that are actually used in the cafeteria. They select products that are painstakingly and carefully made in each region, from Tokushima Prefecture to Shikoku. They also stock items that will make your daily meals more enjoyable, such as cooking utensils selected by professional chefs.

  • We sell bread and baked goods baked daily using our own cultured yeast.
  • Sales of original processed products made with the people of Kamiyama
  • Sales of seasonings used daily in the cafeteria and locally made processed foods

The Food Hub Project has just begun,
I will let you know again how our activities will progress from now on.
The restaurant is located in front of the mountains and river, and the best season is just around the corner.
